The Irish Moss industry in Prince Edward island has been in decline for years, but with the emergence of new markets for the seaweed, there might be new hope for the few remaining mossers on the island. Irish Moss is harvested for its’ carrageenan, an extract that is used as a stabilizing agent in many food products.
