Carol Ann Doucette sorts the Irish Moss (Chondrus crispus) before it gets baled at Shea's Irish Moss plant in North Anglo, Prince Edward Island, Canada. The Irish Moss industry in Prince Edward island has been in decline for years, but with the emergence of new markets for the seaweed, there might be new hope for the few remaining mossers on the island. Irish Moss is harvested for its’ carrageenan, an extract that is used as a stabilizing agent in many food products.
